Artisan honey, unlike the majority of retail honey found on the supermarket shelves, is produced in limited quantities with a deep respect for the honey-bees and the surrounding environment.
The harvesting and bottling process is done by hand rather than commercial bottling equipment to maintain the integrity of the honey. In order to preserve the quality and character of the honey, it is packed without heating or filtering and therefore retains the natural fragrant flavor and healthful properties that it has when it is extracted from the hive. Because this honey is never heated, filtered, or strained it is rich in vitamins, minerals, enzymes, antioxidants and bits of pollen and honeycomb.
The hives are located in a valley sprawling with chickweed, witch alder, violets and lily-of-the-valley flowers, bamboo, alfalfa and other vegetation, lending an intoxicating floral terroire to the honey. Because it is a natural product, the flavor will vary from jar to jar depending on the particular hive and season in which it was harvested.
This exceptional honey is then gently cold smoked with a blend of sugar maple and alder birch wood harvested from the Finger Lakes region, imparting a subtle wood fired aroma that is reminiscent of the forest and crisp fall days.
This exceptional raw creamed honey is packed by beekeeper Bob Brachmann in the southern tier of Western New York and is collected in the fall season.
He uses absolutely no pesticides or antibiotics and instead raises hardy, resilient Russian Queen Bees who are suited for the cold weather in which this fall varietal of honey is produced. His hives are situated on wild sites, away from conventional farms which often use toxic chemicals to further ensure its integrity. Perhaps what makes Bob’s honey so exceptional is its beautiful flavor which he contributes to his bottling process: once extracted, the honey is settled for a few days to float out most of the wax and propolis, then bottled straight out of the settling tank to preserve the delicate and perfume like scent. There is no heat or filtering of the honey whatsoever to preserve is fragrance, flavor, texture, and enzymes.
The flavor of the fall honey is warm, nutty and butterscotch with goldenrod and knotweed being the dominant floral sources. Aster honey is also in the fall mix which prompts it to crystallize quickly into a fine, spreadable consistency if kept at room temperature. This nutty butterscotch flavored honey works beautifully with the sugar maple and alder woods used to cold smoke it producing a toasty flavored liquid gold that is the essence of fall.
